Signature Mature Cheddar Cheese Tarts

Ingredients

Increase Portion Size

120 g Signature by Country Range Extra Mature Cheddar
300 g Country Range Puff Pastry
1/4 tsp Country Range Dried Mixed Herbs
25 g melted butter
1 finely diced shallot
6 cherry tomatoes cut in half
1 egg
100 ml whipping cream
1 salt & pepper to taste

Pre heat the oven to 180/ 160c fan

Brush six small tart cases with a little melted butter

Cut the pastry into 6 even sized pieces and roll out each piece to 3mm thick

Line each tart case with the pastry making sure you press down fully into the edges and chill in the fridge for 10 mins

Line each tart case with tin foil and fill with rice, bake blind for 15 mins until the pastry is fully cooked

Remove the tin foil and rice and place a tsp of diced shallots into each tart case

Half fill each tart case with grated mature cheddar

Mix together the beaten egg, Cream and mixed herbs and carefully fill the tart cases

Top with two halves of cherry tomatoes and season to taste with salt and pepper

Bake in the oven for 12/15 mins until the egg mix has set

Allow to cool for 5 mins and served warm with salads
