Increase Portion Size
- tin Country Range Coconut Milk
- tbsp Country Range Garlic Powder
- ml Vegetable oil
- tbsp Grated fresh ginger
- Sliced red chillies
- Sliced onion
- Sliced spring onions
- Diced aubergine
- g Mange toute
- Sliced baby corn
- Quartered baby pack choi
- g Tender stem broccoli
- g Thai red paste
- Limes Juice and zest
- Small bunch thai basil leaves
- Small bunch mint leaves
- Small bunch coriander leaves

Step 1
Fry the thai red paste, ginger and chillies in the vegetable oil for 30 seconds and then add all of the washed and chopped vegetables -

Continue to gently fry and add the garlic powder and the coconut milk -

Step 3
Simmer for 5 mins and add the herbs -

Step 4
Finish with the lime zest and juice and season to taste with salt -

Step 5
Serve with steamed rice
