Spiced Wholegrain Rice with Roasted Vegetables
A wholesome and flavour-packed dish featuring nutty whole grain rice infused with warming spices and paired with a vibrant medley of roasted vegetables. Gently spiced for depth without overpowering, each bite combines fluffy grains with caramelised vegetables, delivering a satisfying balance of texture and earthy sweetness. Ingredients
Increase Portion Size
- Red onion diced
- Yellow pepper diced
- g Green pepper diced
- Cherry tomatoes cut into half
- Courgette, diced
- Sliced spring onions
- tbsp Mint, chopped
- tbsp Parsley, chopped
- ml olive oil
- ml Red wine vinegar
- Salt and pepper to taste

Step 1
Pre heat the oven to 200c / 180c fan -

Mix together the diced vegetables with 50ml olive oil and season with salt and pepper -

Roast in the oven for 8 mins, mix in the mint and parsley, add the red wine vinegar and keep warm -

Cook the wholegrain rice as per instructions, drain well and add the olive oil, spices, herbs, lemon juice and season with salt and pepper Serve with the roasted vegetables
