Blend the required weight of custard powder and sugar with the specified amount of cold milk to form a smooth paste. Bring the rest of the milk to the boil in a pan. Gently whisk/stir the paste mixture into the boiling milk. Bring back to the boil, stir until the custard begins to thicken. Simmer for one minute, stirring continuously. Do not overcook. Serve hot or cold. Cool rapidly if not using the custard immediately, then keep refrigerated and consume within 24 hours.
